Three easy meals for the independent

I have a couple meals that I find are easy to cook and serve. I’m always looking for things to make my life as well as other’s easier to cope with. One of the things I have been looking into is preparing, cooking, and serving your own meals. I have a few recipes that are simple to prepare and cook. I love to cook my own meals. It is one of the top things I do on a daily basis that makes me feel more independent.


Stir-fry
This is a recipe that I find very easy to make on my own. Not only that but it is filled with vegetables and eating healthy is always the way to go.


Tools
  • 1 frying pan
  • 1 wooden spoon


Ingredients
  • 1 bag of frozen mixed vegetables
  • Oil (enough to coat the bottom of the frying pan)
  • Spices*


Instructions
  1. Place frying pan on element and put heat on medium.
  2. Coat the bottom of the pan with oil.
  3. Pour preferred amount of frozen vegetables and spices in pan.
  4. Mix around with wooden spoon.
  5. Cook for 10-15 minutes while stirring every 5.
  6. Once vegetables are cooked serve on a dish and enjoy.



Stuffed Potato
Another easy recipe that I have put together myself. This dish is god served on its own or with something else. For example, the stir fry I have previously shown you.


Tools
  • 1 baking tray
  • 1 sheet of tin foil or parchment paper*
  • 1 mixing bowl


Ingredients
  • Oil
  • Chives** or onions
  • Pinch of salt
  • Pepper
  • Butter


Instructions
  1. Place uncooked potato on baking tray with parchment paper.
  2. Cook in oven at 400 degrees for 45 minutes.
  3. Take potato out of oven and scoop out most of the potato into mixing bowl.
  4. Chop up chives/onions and mix into the potato.
  5. Add in the pepper and the pinch of salt.
  6. Lastly add one spoonful of oil and mix.
  7. Scoop up the potato and place back into the skin.
  8. Cook for another 15 minutes.
  9. Take out of oven and serve.


Buffalo Chicken
I love making this dish because it is easy and full of flavour. Plus it has a lot of protein in it.


Tools
  • 1 small baking dish


Ingredients
  • 1 piece of chicken
  • 1 bottle of buffalo sauce
  • 1 small onion


Instructions

  1. Turn oven to 350 degrees.
  2. Place chicken in baking dish.
  3. Pour and fill dish about half an inch of buffalo sauce.
  4. Chop up small onion and scatter around the chicken in the sauce.
  5. Bake in oven for about 45 minutes.
  6. Take out of oven and serve.
